Here Are Two Salads, That Won’t Make You Sick This Winter
With 2020 here, most of ya’ll wanna get on that health kick. Me too!
One way to get on it is to put more greens into your diet. I’m not talking Collard Greens with Salt and Hocks – HA! But freshness in the form of Salads. I ran across some salads that might catch ya’lls interest this Winter. I found these salads at Huffpost to help you get prepared for Summer 2020. Most people feel like they don’t have to eat healthy in the cold weather because it’s simply cold. No one is going out, checking out their bodies or anything.
Warm Braised Bean Salad
Serves 4
Ingredients
- 1 pound dried cannellini beans
- 1 bay leaf
- 2 large carrots, peeled and diced
- 1 red onion, peeled and sliced into 1/2-inch half-moons
- 1 large sweet potato, peeled and diced
- 1 delicata squash, halved, seeded and sliced into 1/2-inch pieces
- 3 tablespoons olive oil, divided
- 1 tablespoon sumac
- 3 cups fresh baby spinach
Lemon Herb Vinaigrette
- 1 tablespoon Dijon mustard
- 1/4 cup lemon juice
- 1/2 teaspoon kosher salt
- 1/2 cup olive oil, plus 1 tablespoon for pan
- 2 tablespoons chopped parsley
- 2 tablespoons chives
Banh Mi Salad
Serves 4
Lemongrass Marinade/Dressing
- 1 tablespoon lemongrass paste
- 1 small clove garlic, peeled
- 1 1/2 teaspoons fresh grated ginger
- 4 tablespoons fresh lime juice
- 3 tablespoons soy sauce
- 1/2 cup olive oil
- 1/2 cup water
- 1 tablespoon maple syrup
Salad Ingredients
- 2 tablespoons olive oil
- 4 skin-on, boneless chicken thighs
- 1 head bibb lettuce leaves, chopped
- 1 head romaine lettuce, chopped
- 1/4 cup fresh mint leaves
- 1/4 cup toasted cashews, chopped
- 1 avocado, peeled, pitted and sliced
Pickled Veggies
- 1 1/2 cups water
- 1 cup sugar
- 1/2 cup white vinegar
- 2 carrots, thinly sliced
- 1 English cucumber, thinly sliced
- 4 radishes, thinly sliced
Sriracha Mayo
- 2 tablespoons Sriracha
- 1/2 cup mayo
- 1 tablespoon fresh lime juice
